• 1 cup Basmati rice (rinsed)
  • 1 tbls grapeseed/ olive oil
  • 1 med onion sliced
  • 2 tsp cumin seeds
  • 2 garlic gloves chopped
  • 1/2 inch chopped Ginger
  • 5 peppercorns
  • 5 whole cloves
  • 1 cinnamon stick
  • 1 bay leaf
  • 1 green cardamon pod (Optional)
  • 2 cups water or Vegetable stock (low sodium)
  • 1 tsp salt

In a medium size pot heat 1tbls grapeseed/olive oil on Medium heat. Add sliced onion and cumin seeds and stir till slightly browned. Add garlic, ginger, peppercorns, cloves, cinnamon stick, bay leaf and cardamon pod. Add rice and stir. Add in your water or vegetable stock and salt. Stir everything and cover for 45 min till done.

And there you have it. This is a great side to any Indian dish such as Chicken Tikka Masala, Chole even Lamb Saag.
