<li>1/2 Sliced onion</li>

<li>1 cinnamon stick</li>
<li>1  bay leaf</li>
<li>6 chicken legs</li>
<li>1 cup white rice</li>
<li>3 cups vegetable stock</li>
</ul>
<p>Step 1-<br />
Heat pot and oil</p>
<p>Step 2<br />
Add sliced onion and cumin seeds. Fry till light brown in color</p>
<p>Step 3<br />
Add chopped garlic and 2 pieces of ginger to pot and fry for 1 min</p>
<p>Step 4<br />
Add cloves, peppercorns cinnamon, jalapeno, bay leaf, cardamom pod to pot fry for a few seconds</p>
<p>Step 5<br />
Add 2 tps of water</p>
<p>Step 6<br />
Add chili powder, turmeric, cayenne pepper mix well.</p>
<p>Step 7<br />
Add <span id="st" class="st">chicken</span> legs to pot and stir around till well covered</p>
<p>Step 8<br />
Add water to pot.  Cover and bring to a boil and cook for 20-30 min.</p>
<p>Step 9<br />
Remove <span id="st" class="st">chicken</span> from pot and put in oven at 200</p>
<p>Step 10<br />
Add <span id="st" class="st">rice</span> to pot and cover till fully cooked.  if still hard add a<br />
little more water</p>

But not the traditional tacos and enchiladas.    I wanted something new.  I came across a very interesting recipe that I have toyed with and  changed around to make it my own.</p>
<p>Lets start with the Avocado dip.  Did you know that Avocado is filled with potassium which is a mineral that helps regulate blood pressure. So an adequate intake of potassium can help guard against circulatory diseases, like high blood pressure, heart disease or stroke.</p>
<p>Here are some tips to pick the perfect Avocado</p>
<p>Tip 1. Select heavy, unblemished fruit. Most market will sell unripe and hard avocados. So after you bought one, allow it to ripe between 3 to 6 days.</p>
<p>Tip 2. If avocado yield slightly to gentle pressure, it’s ready to be eaten</p>
<p>Tip 3. If you need to speed up the ripening process, place avocados in a paper bag with apple or banana. Never put avocado in a fridge since it will make the ripening process significantly slower.</p>
<p><strong>Avocado Dip</strong></p>
<ul>
<li>1 Ripe avocado peeled and pitted</li>
<li>1/2 cups milk</li>
<li>1/4 cup light sour cream</li>
<li>1/4 cup fresh lime or lemon juice</li>
<li>1 tbls Jalapeno seeded and chopped</li>
<li>1 tbls fresh chopped cilantro</li>
<li>Salt and pepper to taste</li>
</ul>
<p>Place the Avacado, milk and light sour cream in a food processor or Magic Bullet if you have one and blend.</p>
<p>Once Blended add the remainder of ingredients and pulse until smooth.  Place in the fridge until ready to serve.</p>
<p><strong> Tortilla Chip Chicken</strong></p>
<p>I found that the best way to cook this recipe is in chicken fingers.  Which would also be great for the kids.</p>
<p>First Preheat oven to 350 Degrees</p>
<ul>
<li><span class="brandName">1/2 bag Tostitos tortilla chips</span></li>
<li><span class="brandName">1/2 cup </span><span class="brandName">Tostitos medium fat free salsa</span></li>
<li><span class="brandName">1 egg lightly beaten</span></li>
<li><span class="brandName">1/4 cup all-purpose flour</span></li>
<li><span class="brandName">2 boneless skinless chicken breast seasoned with salt and pepper</span></li>
<li><span class="brandName">Grapeseed oil<br />
</span></li>
</ul>
<p>Put tortilla chips in a food processor and pulse till coarsely ground.  Transfer to a shallow dish.</p>
<p>Blend egg with  and salsa together with a fork in a shallow dish</p>
<p>Place flour in a third shallow dish</p>
<p>Dredge chicken dish in the flour then dip into the egg mixture to coat.  Then transfer the chicken to the ground tortilla chips.  Patting the crumbs onto both sides until fully covered.<br />
Saute chicken in the grapeseed oil on medium to hight heat until golden brown.  Approximately 3 min each side.</p>
<p>Once browned tranfser to the oven and roast until cook through.  This will take about 8-10 min.<br />
Now you are ready to serve.</p>
<p>Side ideas: You can serve this with a black been salad and coleslaw.</p>
<p>Enjoy.</p>

<p><strong><span style="text-decoration:underline;">Step 1</span></strong></p>
<p>Puree the tomato and set aside for later. Next, finely chop the onions.  Cube the chicken breasts into bite-sized pieces, season with a little salt</p>
<p><span style="text-decoration:underline;"><strong>Step 2</strong><br />
</span></p>
<p>Mix together in a bowl the ginger, garlic, cumin, coriander, turmeric, cayenne, garam masala and paprika. This is now your masala paste</p>
<p><strong><span style="text-decoration:underline;">Step 3</span></strong></p>
<p>Put the oil into a pan over a medium heat. When hot, add the cardamom pods and cinnamon stick, leave for a few seconds and then remove. This will flavour the oil. Add the onions and cook while stirring, until brown.</p>
<p><strong><span style="text-decoration:underline;">Step 4:</span></strong></p>
<p>Add the masala paste and stir for a minute.</p>
<p><strong><span style="text-decoration:underline;">Step 5:</span></strong></p>
<p>Add the tomato and tomato  purée and stir for a minute till thoroughly combined.</p>
<p>Pour in the water and bring to a gentle simmer, stirring constantly.</p>
<p>Taste the sauce and season with salt if necessary.</p>
<p><strong><span style="text-decoration:underline;">Step 6:</span></strong></p>
<p>Add the chicken cubes and mix well into the masala. Simmer for 10-12 minutes, stirring every few minutes, until the chicken is cooked and tender. Check this by piercing the chicken with a sharp knife &#8211; if it goes straight through and comes out clean, it is done. For a weaker curry flavour add i cup of yogurt. Mix well and simmer for another 5 minutes.</p>
<p>Remove from heat and place in your serving dish</p>
<p>Serves 4</p>

<li>1 med onion sliced</li>
<li>2 tsp cumin seeds</li>
<li>2 garlic gloves chopped</li>
<li>1/2 inch chopped Ginger</li>
<li>5 peppercorns</li>
<li>5 whole cloves</li>
<li>1 cinnamon stick</li>
<li>1 bay leaf</li>
<li>1 green cardamon pod (Optional)</li>
<li>2 cups water or Vegetable stock (low sodium)</li>
<li>1 tsp salt</li>
</ul>
<p>In a medium size pot heat 1tbls grapeseed/olive oil on Medium heat. Add sliced onion and cumin seeds and stir till slightly browned. Add garlic, ginger, peppercorns, cloves, cinnamon stick, bay leaf and cardamon pod. Add rice and stir. Add in your water or vegetable stock and salt. Stir everything and cover for 45 min till done.</p>
<p>And there you have it.  This is a great side to any Indian dish such as Chicken Tikka Masala, Chole even Lamb Saag.</p>

<li>1/2 tsp pepper</li>
<li>1/2 tsp salt</li>
<li>1 lbs ground beef</li>
</ul>
<p>Preheat oven 350 degree F<br />
In a medium size bowl add ground beef, breadcrumbs, egg, onion, parsley, garlic powder, 1/8 cup ketchup, 1/4 cup BBQ sauce, salt and pepper. Mix well.<br />
After mixing meat form into 3 mini footballs and place in small baking dish.<br />
In a small size bowl mix remainder of ketchup and bbq sauce.<br />
Brush on to mini Meatloafs.  Cook for 55-60 min.  Serves 3</p>
<p>Best served with Garlic mashed potatoes and Creamed corn.</p>

<ul>
<li>1 Pizza dough</li>
<li>Spicy <span class="blsp-spelling-error">Classico</span> tomato sauce</li>
<li>1 cup Mozzarella</li>
<li>1 cup Cheddar cheese</li>
<li>1 lb Ground beef</li>
<li>1 package Spicy taco seasoning</li>
<li>1 cup Crushed Tortilla chips</li>
<li>1/2 cup Spicy Salsa</li>
<li>1 Jalapeno peppers ( Optional )</li>
</ul>
<p>Preheat oven 425 degree F<br />
In a medium Sauce pan cook 1 ground beef and add package of the taco seasoning.  Put aside<br />
Roll out pizza dough. On pizza pan sprinkle semolina on the bottom of the pan so that the pizza does not stick. Put pizza on pan.<br />
Filling:<br />
Put the tomatoe sauce on the bottom sprinkle the mozzorella then the ground beef. Sprinkle the crushed Tortila chips over top . Then spoon on the salsa around pizza. Finally sprinkle the top with cheddar cheese. Then add the jalopeno peppers for that extra kick.<br />
Cook for 12-18 min<br />
Then after cooking you can top with blobs of sour cream.<br />
